Charlie Carrington, an inspirational chef in his 20’s, has combined two of his passions, food and travel, to deliver a dining concept which continually encourages diners to return for something new.

After an eight-month trip dining and working in kitchens across 15 different countries, Carrington returned to Australia eventually opening up his own restaurant, Atlas Dining, to share with us one of the best parts from his travels – the food! His rotating menu tells a story of his culinary experiences and invites patrons to get their passports ready to travel around the world with him.

Atlas Dining’s menu focuses on a new cuisine every four months, offering a set menu that changes weekly. The first cuisine was Vietnamese in 2016 and since then, diners have walked through Atlas’ doors to travel to many countries, such as Israel, Mexico, Thailand, France and Brazil.

This year, Atlas Dining’s Lebanese menu was unfortunately cut short with restaurant doors being forced to close all over the world, leaving everyone in the industry wondering how they will keep their businesses afloat. This only prompted Carrington to stretch his creativity and draw upon an innovative solution to keep his restaurant trading. Initially posting the idea on social media without any preparation on the model yet, to his surprise the idea took off with a glowing response from followers!

On March 30th, Atlas began their first week of Masterclasses where customers order an ingredients box, catering for meals over three nights. Carrington would then post ‘unboxing’ videos on Instragram to explain the ingredients for the week, followed by live videos of a cooking Masterclass, which were then accessible on Instragram’s IGTV and YouTube. After ironing out a few kinks in the first couple of weeks, it’s been smooth sailing from here on in.

The Atlas Masterclass team took customers through Atlas Dining’s journey so far, with Vietnam as the first destination once again. The current destination is Lebanon, once more providing customers with an opportunity to try Carrington’s take on the Lebanese cuisine, including dishes such as lamb sharwarma pita, chicken ‘shish taouk’ and vegetarian options including roasted zucchini and falafel pita.

Not only have Atlas Masterclasses ensured that all of Carrington’s staff remain employed with full-time hours, but the huge response has also called for the hiring of staff – quite an unheard of scenario in the hospitality industry during our current global crisis!

With restrictions lifting and Atlas Dining being able to open their doors to the public again, the success of the Masterclasses has encouraged Carrington to continue this model resulting in a growing team, only adding to this uplifting story amongst the heartache experienced by the hospitality industry during the pandemic. The first destination for the establishment’s re-opening will be India and reservations are available on their website.
