What is caviar?

Considered a delicacy, caviar are the roe or eggs from sturgeon fish. Technically, salmon don’t produce caviar instead a somewhat similar roe (without the extremely expensive price tag to match!) Salmon roe is very delicious and even considered a superfood as you get the same great benefits from eating their roe as you would by eating a piece of salmon.

What does caviar taste like? `

Salmon caviar or roe has a fishy, salty taste and a fantastic sensation as the eggs pop in your mouth as you eat them. We like using salmon roe to garnish salmon blini for a party, in our sushi or straight from the jar if we’re honest! If you’d like a twist on the traditional salmon roe, try the bloody shiraz gin version.

This salmon roe comes from the base of the Rubicon River in the Yarra Valley, Victoria. We only stock the very best produce and Yarra Valley Caviar are an industry leader in this space. They are Australia’s only producer of freshwater Atlantic Salmon, and have pioneered a natural approach to rearing and roe extraction.

To source the roe, the salmon are milked completely by hand, once a year, under a completely natural anaesthetic of clove oil, and are then gently placed back in their ponds to spawn again the following year.
Yarra Valleys Caviar’s products are packaged on site, without the use of any additives. The result is a superb quality roe salted with premium salt to produce bright, plump and flawless caviar – bursting with flavour. The award winning products are then shipped all over the world.

How to use

Garnish onto scrambled eggs, on your favourite summer salads or onto oysters. Get creative and add to all your favourite dishes. We love it in sushi or salmon blini, but why not try it on everything!
